I found that it's possible to link a shape to a matrix parameter where using the matrix component is mandatory. Is it possible to have more or less the same behavior in Visual Overview by only using the source and destination tables?

The Visual Overview matrix shape will only work for a matrix parameter. This includes support for a matrix parameter that uses source-destination tables.
Using these tables separately without a matrix parameter will not work.

It's not possible to do this directly, but you can create a router control configuration using the two tables, and embed the router control configuration in the visual overview.
