I currently have DataMiner Cube 9.6.0.0 along with DataMiner APIGate. We currently have .Net Core 5.0.17 and 6.0.33. Would we be able to update the .Net Core to 8 without any issues?

Different .NET versions are not compatible with each other. This means that it's not possible to simply replace .NET 5 or 6 by .NET 8. Instead, we first have to make changes to the software and release a new version that targets .NET 8.
You can find a full overview of the .NET requirements per DataMiner here. Note that the DataMiner versions that only have .NET 8 as a dependency are not yet available (they should release on September 20th). Once these versions are released, you can upgrade to 10.3.0 [CU19] and remove .NET 5 and 6 from your systems.

On September 20th we would update the latest Dataminer, install .NET 8, and then uninstall .NET 5 and 6.

.NET 8 needs to be installed before upgrading to the new version. Also make sure to update all the installed DxMs to their latest versions as well before removing .NET 6.
This also has Dataminer 10.3.0.0
