I am getting ready to test running Cassandra in a CentOS VM. Is there any need to have the Linux install with a desktop GUI? I would like to minimize the Linux install size and resources it consumes and would assume that not having the overhead of a GUI desktop and all the related applications would make a big difference but I am not a Linux expert. Any feedback from an experienced user would be much appreciated.

It is not required to install the GNOME desktop (or any GUI) on your Centos OS to run Cassandra. All commands used to install and maintain Cassandra don't rely on any graphical interface.
I believe your question goes from the resource point of view. The GUI will always consume resources (even if you are not connected). Keep also in mind the security point of view. A GUI is just another door for a potential attacker.
