Can a Visio be associated automatically with an enhanced service connector the same way as is for a normal connector ? This is to allow when we create an enhanced service that a visio is automatically associated with it.

Yes, you can link a Visio diagram to a service protocol, and it will function similarly to a regular protocol.
For example, you can create a service protocol for bookings, and within that protocol, implement logic to identify the nodes involved in the booking.
You can then use this information to dynamically generate a Visio diagram that reflects the setup.

It seems that it is not possible. I performed a small test by setting a custom Visio file as default:
When creating an enhanced service using the same service protocol, I am not able to see the custom Visio file (only the default one).
When opening the context menu to select the Visio file, you could already see the difference between an enhanced service and an element:
