What Data or Configuration would I lost on my DMA if I only have a VM snapshot as backup instead of a DMA Failover ?
Taking into account that my Elastic and Cassandra DB will be host on separate VM

A VM snapshot is definitely a valid option, but I would more consider this an alternative for regular backups. If something goes wrong, you can contact IT to restore a previous snapshot, and all configuration changes done in the last x hours would be lost, depending on when the last valid snapshot was taken. Trend and alarm data would still be there, since this is hosted on separate VMs.
In a failover setup you have a continuous, real-time sync between 2 servers, and you won't lose any configuration data. If something goes wrong, you can immediately trigger a switchover in DataMiner Cube or even configure this to happen automatically without contacting IT to restore a server.

VMware does not recommend using snapshots as regular backup at all.

I would also like to add that if Dataminer is being used for any orchestration or control functions, the FO model is highly recommended because of the immediate switchover.
A VM snapshot is definitely a valid option but the delay of restoring a VM snapshot and the downtime in restoring a snapshot needs to be factored into an acceptable outage time range.
